These are my absolute favorite Christmas cookie.  I could seriously eat the whole batch!  It's a project to make them, but the kids love it and I love being with them (and eating them of course).  Usually I make them all pretty with the sugar glitter... but well... when kids come, their fun smiling faces decorating the cookies themselves?... priceless!

Recipe for the cookies:

  • 1 cup of butter, softed
  • 1 1/2 cups of sifted confectioners' sugar
  • 1 egg
  • 1 tsp of vanilla
  • 1/2 tsp of almond extract
  • 2 1/2 cups of flour
  • 1 tsp. of baking soda
  • 1 tsp. of cream of tartar
Cream butter and sugar, until smooth.  Beat in egg, vanilla, almond extract.  Combine flour, baking soda and cream of tartar & blend into mixture.  Chill for at least 2 hours.  
Preheat oven to 375 degrees, roll out dough to 3/16 inches in thickness (I prefer pretty thick cookies).  Cut out cookies and place on a baking sheet.  I like to use parchment paper on my baking sheet.  It really makes a difference in the way the cookie cooks!  Bake for approximately 8 minutes.  My oven is pretty hot and I baked them for 6 1/2 minutes.
For the icing we mix confectioners' sugar and milk.  Add just a bit of milk at a time to get the right consistency.  Add your colors, and decorate!
