My beautiful Ella (my mother knitted the little cap).  She is such a sweet girl inside & out.

This crazy plant is in my hallway.  I have no idea what kind of plant it is, I've had it for years.  This year it had (for the first time) a strange looking blossom coming out of it and then... it bloomed!  These tiny little white flowers that only open in the evening and smell like gardenia?!  See, I told ya, crazy!  Note to self, don't kill the plant!

How adorable is this?  We went to the mall over the weekend to let the kids play on the indoor playground (because it's still freezing here).  Of course we pop over to the "Learning Express" (aka toy store) that is so conveniently located next to the playground... to pick up a few fun things.  We found this little kit to make chocolates.  It kept the nuggets busy for quite a while - awesome!

On the same mall trip I saw this sign and just had to snap it.  Woot Woot !

This was dinner I made Monday night.  SO scrumptious and easy peasy.  Recipe follows:

Ingredients:
salmon
fresh garlic (chopped fine)
fresh ginger (hint I keep ginger in the freezer and then grate it, frozen, when I need it)
lemon
soy sauce
honey
lil' salt & pepper

Place salmon on a plate, rub the garlic and ginger into the salmon gently.  Squeeze some lemon over the salmon along wtih the soy sauce.  Lastly drizzle honey onto the salmon.  Let this marinate (out of the fridge) for about a 1/2 hour, no longer!  

You can either grill (fabulous) or bake it (which I did Monday because I wasn't feelin' the grill in 30 degree weather).  As you cook the salmon, continue to add/drizzle some honey over the top.  I drizzled the honey about 3 times while baking it.  I baked this salmon for about 30 minute and that will depend on the cut, how thick it is.

I served our salmon with quinoa (so healthy & yummy) and organic broccoli.   Yum time!

  1. that looks so yummy! i have never tried salmon before always scared I wouldn't like it..but this looks so delicious! i bet you could do this with any type of fish :) love it! thanks for sharing!

    1. Oh salmon is such a great fish to cook. Very "fatty" so it's hard to overcook it :)

  5. Delicious din din and great tip for keeping ginger frozen! I must do this next time I buy some. Usually I end up tossing most of it because I don't use it all and only kept it in the fridge. Thanks for the great tip!
