I love cloudy fall weekends when I can cook and try new recipes. When I got to my Safeway grocery store, they had a great special going on - buy 3, save 3 - hooray! Sign up at the Safeway "Just For U" website to get this great savings. What did I buy? Some yummy Hillshire Farm's beef smoked sausage to try a new empanada recipe (that the nuggets will actually eat). Like most toddlers, Jack and Ella are picky eaters. Only recently have we gotten them to eat beans! But as you can see from the pictures below - they love Mama's new empanada recipe!
Empanada Recipe
Ingredients:
- 1 package of Hillshire Farm's beef smoked sausage
- 1 small red pepper
- 1/2 onion
- 1 clove of garlic
- a handful of carrots
- a package of puff pastry
- 2 tbsp. of milk
- salt & pepper to taste
Directions:
Coarsely cut the veggies and sausage. Put them in a food processor and pulse until about the texture of ground beef. Transfer this wonderful mixture into a skillet and saute for about 10 minutes, salt & pepper to taste. As the mixture is sauteing, roll out your puff pastry and cut into rounds. Place the rounds into the fridge. Pull the sauteed mixture off the burner and let cool slightly. After the puff pastry has been chilled for about 10 minutes, pull out of the refrigerator and spoon a little mixture in the center of the round. Fold the pastry in half to make a "pocket". Take a fork and edge the round closed. Using a pastry brush, brush a little milk on top of the empanada. I also like to add a little more salt & pepper! See pictures above.
Bake at 400 degrees until pastry has browned, about 15 to 20 minutes. Enjoy! The hubs and I enjoy ours with a little spicy mayo dip!
I was so happy the nuggets loved the empanadas. It's a great way to "disguise" veggies into something delicious they will eat!
