It's been a long time since I've shared some yummy food recipes. Being honest there hasn't been much cooking going on in the Lulu house in the last year. Life has been crazy with working, the Mr. changing jobs, the nuggets and their schedule - homemade meals haven't made it to the table. Don't get me wrong, we still eat healthy options, but in a more shortcut route (organic freezer options!) But I'm hoping to change this now with school starting, I have a bit more time. This is an easy and delicious summer recipe with only 6 ingredients (a little help from Bisquick too :)
Ingredients:
For shortcake:
- 2 1/3 cups of Bisquick
- 3 Tbsp. butter
- 1/4 cup of sugar
- 1/2 cup of milk
- 2+ cups of blackberries
For topping:
- 1/4 cup butter
- 1/2 cup of brown sugar
Instructions:
Preheat oven to 425 degrees. Follow the recipe on the Bisquick box for the strawberry shortcake recipe. Bake the cake according to the recipe instructions less 5 minutes. While the cake is baking melt together the 1/4 cup of butter and 1/2 cup of brown sugar. Remove the cake from the oven. Take a fork and cave in the cake a bit so that when you pour the blackberries onto the cake they will not all fall off! :) Distribute the brown sugar mixture over the blackberries and cook again (at the same temperature) for 10 minutes. Remove from the oven and let cool. Enjoy!

DeleteLooks so yummy, I love strawberry shortcake so I'm sure I'd love this as well. Do you pack your little ones lunches? I'm trying to get some lunch ideas for my little girl and she's super picky making it even tougher.
ReplyDeleteThis is actually the "cake" I use for strawberry shortcake. It's not too sweet which is perfect. My nugs are very picky and they actually pack their own lunch mostly. They help me load organic snacks in baggies according to snacks, fruits, and desserts. We put them in baskets in the pantry and they get to pick what they want. I make their sandwich which is either turkey or PB :) Hope that helps!
