One thing I can NEVER turn down is a piece of pizza. It's one of my weaknesses! I decided to try grilled pizza with fresh spring asparagus. I added some more savory pieces like prosciutto and Parmesan Reggiano. I can't really make anything without adding some sweetness. :) So figs and balsamic glaze (which is good on just about anything) did the trick.
Ingredients:
- Pizza dough (you can pick up some at your local pizza shop)
- Proscuitto
- Asparagus
- Garlic
- Red Onion
- Figs (I used turkish figs)
- Parmesan Reggiano cheese
- Balsamic glaze
- Olive oil
- Salt and Pepper to taste (Jane's salt, my fav of course)
I first sauteed, in olive oil, some asparagus and garlic just enough to brighten the asparagus, about 3 minutes. Don't forget to season!
Next I rolled out the pizza dough, trying as best I could to get it thin. My dough wasn't cooperating with me! I would have preferred it to be thinner. I brushed one side of the dough with olive oil, salt, and pepper. I placed the oil side down on the grill.
As the first side cooked, I brushed olive oil, salt, and pepper on the side up. After the first side cooked, I flipped, and cooked the second side. It's ok if it burns!
Place all your ingredients on the pizza, however you like! Add or take away any ingredients :)
Cook in a HOT oven (I put mine at the highest, 500 degrees), for about 5-8 minutes. Although I grated the cheese, sliced would be better. I also think gorgonzola would be great!
Slice and enjoy!
