This is a recipe I pulled out of a hat! I needed an appie for a Christmas party and I tried my best to duplicate this goat cheese and apricot spread from one of my favorite restaurants. I have to say... It's pretty good! These flavors are delicious together and yes, you could buy apricot spread, but homemade is better - and super easy!
Ingredients:
- apricots
- water
- sugar
- french baguette
- plain goat cheese
- sliced almonds
Apricot Spread:
- 1 cup of water
- 1 cup of sugar
- 1 cup of apricots (diced)
Combine all ingredients in a medium sauce pot. Bring to a boil and let simmer until the sauce is molasses like in texture. Let cool until slightly warm.
To make the crostini, I use french baguette bread. I love this bread, so basic and delicious, I use it for many of my appetizers. Cut in diagonal slices and toast in the oven on both sides. Spread with goat cheese and dust lightly with salt. Spoon apricot spread over goat cheese and sprinkle with almonds. Enjoy!
