Just in time for your 4th of July picnic. This coleslaw was a hit at our Soler Soiree Party! I has it all sweet, spicy and a good crunch.

Ingredients:
- 1 head of napa cabbage, shredded
- 4 carrots, shredded
- 2 Granny Smith apples, thinly slice
- 1 cup of pecans, toasted and chopped
- 1 medium red onion, thinly sliced
Dressing:
- 1 T Dijon mustard
- 1 t of sugar
- 1 t of ground chipotle
- 3/4 c of mayonnaise
- 1 lemon, juiced
- salt & pepper to taste
Directions:
Combine the cabbage, carrots, apples, onion & pecans in a large bowl. Mix well with your hands and set aside.
In a small bowl, stir together the mustard, sugar, mayonnaise, ground chipotle, and lemon juice until blended. Season with salt and pepper. Pour the dressing over the cabbage mixture and toss well to coat. Enjoy!
Today is my hubs birthday. So here's to my best love, Happy Birthday honey! We're going out to dinner tonight at a great little BYO. I'm excited to spend an evening together and celebrating his day.
If you have been reading my blog, you know I have a love affair with Trader Joe's. I love their products and I don't have to worry about looking at all the ingredients when I shop there because I know they are wonderful! This is the best soap and hand lotion. The scent is wonderful and the lotion is just perfect.
I found this letter on my bedside table when I came home from work one day. My Ella is such a sweetie. She is a very thoughtful, spiritual little girl. And not to mention hilarious!
I bought this hairspray when the hubs and I went to Denver a few months ago. I needed something for that ever so wonderful rule that you have to have 3oz. or less in liquids. THIS is a fabulous hairspray and I will be buying the normal size when my current hairspray runs out. It's light, smells wonderful, and keeps my style!
