Nothing beats gazpacho in the summer. It's so fresh, and a perfect pairing to anything on the grill. This recipe is another from our dearly departed Mimi (my hubs grandmother who passed away in October). We had it a lot when we would visit her in Florida.
Recipe:
- 2 cans of tomatoes (I used diced)
- 1 European cucumber, skinned
- 1 red pepper
- 1 clove of garlic
- 3 Tbs. of vinegar
- 3 Tbs. of olive oil
- 1 slice of bread, dipped in water and squeezed
- pinch of salt
- pinch of sugar
Place all ingredients into a Cuisinart and blend until liquid. Mimi used to strain hers, but I like it a little "chunky". Chill and serve!
The beach. This was taken from our short trip over the weekend. I am so looking forward to our trip to New England next week. Ella keeps talking about the "island" we're going to.... she is very excited!

Awesome J.Crew flats. I love them. They are a great alternative to flip flops or sandals. Because of the laser cut outs, your feet are fashionable and cool!
This is a wall in my family room. The idea of this wall came to me when we moved into this house. I wanted a sort of beach feel to this room. Light, airy, relaxing. You'll see the pictures, left-top, is an old picture of my husband and his brother (my hubs is the one with the dutch-boy haircut, hehehe) at the beach in Florida. Right, is a picture of my sister and I at a beach on Cape Cod. I only had these two pictures for a long time. Until the nuggets were 3, they hated the beach, the sand, the ocean, everything. So last year when they FINALLY loved the beach, I could complete my wall. It's a wall to remind me of family, children, and the love my Savior has for all of us.
